  • 4 cups yellow potatoes, peeled and diced (about 600g)
  • 1 pound ground beef, 80/20 lean-to-fat ratio (450g)
  • 6 slices bacon strips, cooked and crumbled
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 4 cups beef broth (950ml), low sodium preferred
  • 2 cups whole milk (475ml), can substitute 2% or half-and-half
  • 2 cups sharp cheddar cheese, shredded (200g)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • 2 tablespoons butter

Instructions

  1. Cook the bacon strips in a large pot over medium heat until crispy, about 6-8 minutes, flipping occasionally. Remove bacon and drain on paper towels. Crumble once cool and set aside. Leave about 1 tablespoon of bacon fat in the pot.
  2. Increase heat to medium-high. Add ground beef to the pot with bacon fat. Break up the meat and cook for 5-7 minutes until browned and no longer pink. Drain excess fat if necessary.
  3. Add butter, chopped onion, and minced garlic to the pot. Stir and cook for 3-4 minutes until softened and fragrant, stirring frequently.
  4. Stir in diced potatoes. Pour in beef broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes until potatoes are fork-tender.
  5. Partially mash potatoes in the pot using a potato masher or immersion blender, leaving some chunks for texture. Avoid overblending.
  6. Stir in whole milk, Worcestershire sauce, Dijon mustard, salt, and pepper. Heat gently over low heat without boiling.
  7. Gradually add shredded cheddar cheese, stirring constantly until melted and smooth. Taste and adjust seasoning.
  8. Ladle soup into bowls and top with bacon crumbles, extra shredded cheddar, and sliced green onions. Optionally add a dollop of sour cream.

Use fresh shredded cheese for smoother melting and avoid graininess. Keep heat low when adding milk and cheese to prevent curdling. Save bacon fat for browning beef for extra flavor.
