These creamy overnight peanut butter protein oats are a game-changer for busy mornings. With just 5 minutes of prep, you get a thick, pudding-like breakfast that tastes like peanut butter cookie dough but is packed with protein and fiber.

Ingredients

Scale
  • 1/2 cup (45g) old-fashioned rolled oats
  • 2/3 cup (160ml) milk of choice (2% recommended)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (25-30g) vanilla or unflavored protein powder
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) maple syrup or honey
  • Pinch of salt
  • Optional mix-ins: dark chocolate chips, sliced banana, chopped peanuts, extra peanut butter drizzle, cinnamon

Instructions

  1. Add the rolled oats, protein powder, chia seeds, and salt to a mason jar or airtight container. Stir to combine.
  2. Add the peanut butter and maple syrup or honey on top of the dry ingredients.
  3. Pour in the milk slowly, pouring it over the peanut butter to help soften it.
  4. Stir vigorously for at least 30 seconds until the peanut butter is fully incorporated, the protein powder is dissolved, and the chia seeds are evenly distributed. Smash any peanut butter globs against the side of the jar.
  5. Taste and adjust sweetness or salt if needed.
  6. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  7. In the morning, stir the oats (the chia seeds settle at the bottom). Serve cold or warm: if microwaving, remove the lid and heat for 45-60 seconds, stirring halfway through. Add desired toppings and enjoy.

Notes

For best texture, use old-fashioned rolled oats (not quick or steel-cut). If using a different protein powder brand, adjust milk by 1-2 tablespoons as needed. The oats keep in the fridge for up to 5 days. For a thicker consistency, add an extra teaspoon of chia seeds and let sit for 30 minutes. For a thinner consistency, stir in a splash of milk before serving.
