These creamy overnight peanut butter protein oats are a quick and easy breakfast that tastes like a dream. With simple ingredients and a secret blending technique, they deliver a velvety, satisfying bowl that keeps you full until lunch.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk of choice
  • 1/2 cup (120g) plain Greek yogurt
  • 1/4 cup (60g) creamy peanut butter
  • 2 tablespoons (30ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds
  • 1 teaspoon (5ml) vanilla extract
  • 1 pinch salt
  • 1 scoop (about 30g) vanilla or unflavored protein powder (optional)
  • 1/2 banana, sliced (for topping, optional)
  • 1 tablespoon dark chocolate chips (for topping, optional)
  • 1 tablespoon extra peanut butter (for topping, optional)
  • 1 tablespoon chopped peanuts (for topping, optional)

Instructions

  1. In a blender, combine milk, Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, salt, and protein powder (if using). Blend on low until smooth, about 30 seconds.
  2. Add rolled oats and chia seeds to the blender. Pulse a few times just to combine, or stir by hand if not using a blender.
  3. Divide the mixture evenly into 2-3 mason jars or airtight containers, leaving about an inch of space at the top.
  4. Refrigerate for at least 6 hours, preferably overnight.
  5. In the morning, stir the oats well. If too thick, add a splash of milk to reach desired consistency.
  6. Add desired toppings (sliced banana, chocolate chips, extra peanut butter, chopped peanuts) and enjoy cold or warm.

Notes

For extra creaminess, blend half the oats with the liquid base and stir in the other half whole. Don’t skip the salt—it enhances the peanut butter flavor. These oats taste even better on day 2 and 3 as flavors meld. To reheat, microwave for 45 seconds to 1 minute, stirring halfway.
