  • 1/2 cup milk of your choice (whole milk recommended)
  • 2 tablespoons creamy peanut butter
  • 1 ripe banana (mashed)
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon chia seeds (optional)
  • Pinch of salt
  • 1/4 teaspoon vanilla extract (optional)

Instructions

  1. Mash the ripe banana in a jar or small bowl with a fork until mostly smooth.
  2. Add 2 tablespoons of creamy peanut butter. If stiff, microwave for 10 seconds to soften.
  3. Pour in 1/2 cup of milk.
  4. Add 1 tablespoon of maple syrup or honey and a splash of vanilla extract (if using). Stir to combine.
  5. Add 1/2 cup of rolled oats and 1 tablespoon of chia seeds (if using). Stir until evenly coated.
  6. Add a pinch of salt and stir one last time.
  7. Cover the jar and refrigerate for at least 4 hours, preferably overnight.
  8. In the morning, stir well. If too thick, add a splash of milk. Enjoy cold or warm (microwave for 45-60 seconds). Top with sliced banana, peanut butter drizzle, or granola.

Notes

For best texture, use rolled oats (not quick or steel-cut). The riper the banana, the sweeter the oats. Chia seeds help create a thicker, pudding-like texture. Overnight oats keep in the fridge for up to 5 days. Adjust liquid to preference: use 1/3 cup milk for thicker oats, add more milk in the morning for thinner oats.
