  • 12 tablespoons (15-30ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon (2.5ml) vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana in a jar or small bowl with a fork until mostly smooth with a few small lumps.
  2. Add the milk, peanut butter, maple syrup, and vanilla extract to the jar. If peanut butter is stiff, microwave for 10 seconds to soften.
  3. Whisk or stir until smooth, ensuring peanut butter is fully incorporated.
  4. Add rolled oats, chia seeds (if using), and a pinch of salt. Stir until evenly combined and oats are submerged.
  5. Seal the jar and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk.
  7. Add toppings like sliced banana, extra peanut butter, or chia seeds. Enjoy cold or microwave for 30-45 seconds for warm oats.

Notes

Use a very ripe banana for natural sweetness and creaminess. For extra thick oats, add an extra tablespoon of chia seeds. Oats keep in the fridge for up to 5 days. Do not freeze.
