Instructions

  1. In a small bowl or directly in your jar, whisk together the milk, Greek yogurt, peanut butter, and honey (or maple syrup) until the peanut butter is mostly incorporated.
  2. Add the rolled oats, protein powder, chia seeds (if using), and a pinch of salt to the jar. Pour the wet mixture over the dry ingredients.
  3. Stir thoroughly with a spoon until no dry pockets remain, scraping the corners of the jar to ensure everything is combined. The mixture should look like a thick, slightly lumpy batter.
  4. Seal the jar with a lid and place it in the refrigerator. Let it sit for at least 6 hours, but overnight (8-12 hours) is ideal.
  5. In the morning, remove the jar from the fridge and give it a good stir. The oats should have thickened significantly and look creamy and pudding-like. If too thick, add a splash of milk and stir again.
  6. Add your desired toppings (e.g., sliced banana, extra peanut butter, dark chocolate chips, chopped peanuts).
