  • 1 cup cold brew or strong iced coffee
  • 2 tablespoons heavy cream
  • 1 tablespoon milk (whole or oat)
  • 1 tablespoon pumpkin purée (not pumpkin pie filling)
  • ¼ teaspoon pumpkin pie spice
  • ¼ teaspoon vanilla extract
  • 1 teaspoon maple syrup or brown sugar
  • Ice cubes

Instructions

  1. Fill a tall 16-ounce glass with ice cubes.
  2. Pour in cold brew or iced coffee until the glass is about three-quarters full.
  3. In a small bowl or jar, combine heavy cream, milk, pumpkin purée, pumpkin pie spice, vanilla extract, and maple syrup. Stir briefly to break up the pumpkin purée.
  4. Froth the mixture using a handheld frother for 20-30 seconds, or shake vigorously in a sealed jar for 30-40 seconds, until it doubles in volume and becomes thick and creamy.
  5. Spoon the cold foam gently over the iced coffee, using a spoon to layer it on top so it floats.
  6. Sprinkle a pinch of pumpkin pie spice on top for garnish. Serve immediately with a straw.

Notes

Use cold ingredients for best foam. Don’t over-froth or it will turn into butter. Layer foam gently with a spoon to keep it floating. The mixed base (cream, milk, pumpkin, spices, sweetener) can be stored in the fridge for up to 3 days, but froth fresh each time.
