  • 1 pound Italian sausage, mild or spicy, casings removed
  • 1 package (9 ounces) cheese ravioli, fresh or frozen
  • 4 cups chicken broth, low-sodium
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach, loosely packed
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 tablespoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add Italian sausage, breaking it up with a wooden spoon. Cook 6-8 minutes until browned and cooked through. Drain excess fat if needed.
  2. In the same pan, add chopped onion and minced garlic. Cook 3-4 minutes until softened and fragrant.
  3. Transfer browned sausage, sautéed onion, and garlic into the slow cooker. Add chicken broth, sun-dried tomatoes, Italian seasoning, salt, and pepper. Stir well to combine.
  4. Cover and cook on low for 4 hours (or 2-3 hours on high).
  5. After 4 hours, stir in cheese ravioli and fresh spinach. Cover and cook for an additional 20-30 minutes until ravioli is tender and spinach is wilted.
  6. Stir in heavy cream and grated Parmesan cheese. Taste and adjust seasoning if needed. Let warm through for 5 minutes before serving.

Notes

Brown the sausage before adding to the slow cooker for better flavor. Add ravioli and spinach near the end to avoid overcooking. For thicker soup, stir in a cornstarch slurry during the last 10 minutes. Use gluten-free ravioli and broth for gluten-free version. Can substitute heavy cream with half-and-half or coconut milk for lighter or dairy-free options.
