  • 1 cup heavy whipping cream, cold
  • 3/4 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 23 cups fresh fruit (strawberries, blueberries, raspberries, blackberries, peaches, or nectarines)
  • 1 teaspoon lemon zest (optional)
  • 1/4 cup graham cracker crumbs or shortbread crumbs (optional for layered desserts)

Instructions

  1. Take 8 ounces (225 g) of cream cheese out of the fridge about 30 minutes before starting so it softens to room temperature.
  2. Pour 1 cup (240 ml) of cold heavy whipping cream into a chilled bowl. Using an electric mixer, whip on medium-high speed until soft peaks form (3-5 minutes).
  3. In another bowl, beat the softened cream cheese with 3/4 cup (90 g) powdered sugar and 1 teaspoon vanilla extract until smooth and creamy (2-3 minutes).
  4. Gently fold the whipped cream into the cream cheese mixture with a spatula to keep it light and airy.
  5. Wash and pat dry about 2-3 cups of fresh fruit. Slice larger fruits like peaches or nectarines into thin wedges. Toss with a teaspoon of lemon zest if desired.
  6. If serving in glasses or bowls, start with a layer of graham cracker or shortbread crumbs at the bottom (about 1/4 cup or 30 g), then add a spoonful of cream cheese frosting, followed by a layer of fresh fruit. Repeat layers until full.
  7. Refrigerate the dessert for at least 1 hour to let flavors meld and the frosting firm up slightly. Serve chilled.

Notes

Do not overwhip the cream to avoid grainy texture. Fold whipped cream gently into cream cheese mixture to keep it light. Use ripe but firm fruit to avoid sogginess. Frosting can be made a day ahead and whisked gently before use. Avoid freezing as frosting may separate.
