  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup buffalo sauce (120ml), e.g., Frank’s RedHot
  • 2 tbsp olive oil or melted butter
  • For the ranch dip:
  • 1/2 cup mayonnaise (120g)
  • 1/4 cup sour cream (60g)
  • 2 tbsp buttermilk (30ml), optional
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried dill
  • 1 tbsp fresh chives or parsley, finely chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, whisk together flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.
  3. Gradually add water, whisking until smooth and thick enough to coat the back of a spoon. Add more flour if too thin.
  4. Dip cauliflower florets into the batter, allowing excess to drip off. Place evenly spaced on the lined baking sheet without overcrowding.
  5. Bake for 20 minutes, flipping the bites halfway through to ensure even crispiness.
  6. While baking, combine buffalo sauce with olive oil or melted butter in a small bowl and stir well.
  7. Remove cauliflower from oven and gently toss in the buffalo sauce mixture until evenly coated.
  8. Return coated bites to the baking sheet and bake for an additional 10-12 minutes to caramelize the sauce and increase crunch.
