A quick and easy 15-minute dinner featuring crispy pan-fried ramen noodles and tender seared beef with a savory, slightly sweet sauce. Perfect for busy weeknights or unplanned guests.

Ingredients

  • 8 oz flank steak or sirloin, thinly sliced against the grain
  • 2 packs ramen noodles (discard seasoning packets) or about 6 oz fresh ramen noodles
  • 1 cup shredded carrots
  • 1 cup thinly sliced bell peppers
  • 2 green onions, sliced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional but recommended)
  • 1 tbsp honey or brown sugar
  • 1 tsp toasted sesame oil
  • 1 tsp rice vinegar
  • 1/2 tsp crushed red pepper flakes (optional)
  • 2 cloves garlic, minced
  • 1 tsp freshly grated ginger
  • 2 tbsp vegetable oil or neutral oil for frying
  • Salt and black pepper to taste
  • Sesame seeds and extra sliced green onions for garnish (optional)

Instructions

  1. Bring a large pot of water to a boil. Add the ramen noodles and cook for 2 minutes or until just tender. Drain and rinse under cold water to stop cooking. Set aside.
  2. In a small bowl, whisk together soy sauce, oyster sauce, honey, sesame oil, rice vinegar, red pepper flakes, garlic, and ginger. Set aside.
  3. Heat 1 tablespoon of oil in a skillet over medium-high heat. Season beef slices with salt and pepper. Add beef in a single layer and cook for 1-2 minutes per side until browned but still tender. Remove beef from pan and set aside.
  4. Add remaining oil to the pan. Toss in shredded carrots and bell peppers. Stir-fry for 2-3 minutes until tender-crisp. Add green onions last and cook for 30 seconds.
  5. Push the veggies to one side. Add the drained noodles in an even layer and press down gently. Let cook undisturbed for 2-3 minutes to develop a crispy bottom. Flip and crisp the other side for another 2 minutes.
  6. Return the beef to the pan. Pour the sauce over everything. Toss gently to coat noodles, beef, and veggies evenly. Cook for another minute so flavors meld and sauce thickens slightly.
  7. Remove from heat and sprinkle sesame seeds and extra green onions on top. Serve immediately.

Notes

To get crispy noodles, cook them twice: boil then pan-fry undisturbed. Use enough oil and a hot pan. If noodles stick, add a splash of oil or water. Slice beef thinly against the grain for tenderness. Customize sauce sweetness or heat to taste. For gluten-free, use tamari and gluten-free oyster sauce. Leftovers reheat best in a skillet to restore crispiness.
