A quick and easy recipe for crispy garlic herb chicken thighs with a flavorful garlic butter baste, perfect for busy weeknights and satisfying dinners.

  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 680 g)
  • 4 cloves garlic, minced
  • 1 tbsp chopped rosemary
  • 1 tbsp chopped thyme
  • 1 tbsp chopped parsley
  • 3 tbsp unsalted butter, softened
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp fresh lemon juice
  • Optional: pinch of red pepper flakes or smoked paprika

Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper. Let sit while preparing the garlic herb butter.
  2. In a small bowl, mix softened butter with minced garlic, chopped rosemary, thyme, parsley, lemon juice, and a pinch of salt until well combined.
  3. Heat a cast iron or stainless steel skillet over medium-high heat. Add olive oil and warm until shimmering but not smoking.
  4. Place chicken thighs skin-side down in the hot skillet without overcrowding. Let skin crisp undisturbed until golden brown and releases easily from the pan, about 7-8 minutes.
  5. Turn the chicken over gently using tongs. Immediately brush or spoon the garlic herb butter over the skin side and cook for 5 more minutes, basting frequently.
  6. If chicken is not cooked through, transfer skillet to a preheated 400°F (200°C) oven and finish cooking for 8-10 minutes until internal temperature reaches 165°F (74°C).
  7. Remove chicken from pan and let rest on a cutting board for 5 minutes before serving.

Notes

Pat chicken dry before cooking to ensure crispy skin. Do not overcrowd the pan to avoid soggy skin. Use medium-high heat to get a golden crust without burning. Rest chicken after cooking to keep it juicy. For extra crispiness, broil chicken for 1-2 minutes at the end. For dairy-free, substitute butter with olive oil or coconut oil.
