Crispy Grilled BBQ Bacon-Wrapped Corn on the Cob

A delicious summer recipe featuring fresh corn on the cob wrapped in thick-cut bacon, grilled to crispy perfection and glazed with tangy BBQ sauce. Perfect for backyard parties and quick weeknight meals.

  • 4 ears fresh corn on the cob, husked
  • 8 slices thick-cut bacon (two per ear of corn)
  • ½ cup BBQ sauce (smoky, slightly sweet, e.g., Stubb’s Smokey Mesquite)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon freshly ground black pepper
  • Salt to taste
  • Optional: chopped fresh parsley or chives for garnish

Instructions

  1. Husk the ears of corn and remove all silk. Pat dry with paper towels (about 5 minutes).
  2. Lightly brush each ear with olive oil. Sprinkle with garlic powder, smoked paprika, a pinch of salt, and black pepper.
  3. Wrap two slices of thick-cut bacon spirally around each ear, overlapping slightly. Secure with toothpicks or kitchen twine if needed (about 10 minutes for all ears).
  4. Preheat grill to medium heat (around 350°F/175°C). Oil the grill grates lightly to prevent sticking.
  5. Place the bacon-wrapped corn on the grill. Cook, turning every 4-5 minutes, for 20-25 minutes until bacon is crisp and corn is tender. Move to cooler part of grill if bacon starts to burn.
  6. In the last 5 minutes, brush each ear generously with BBQ sauce, turning and basting repeatedly to build a sticky glaze.
  7. Remove corn from grill and let rest for 5 minutes. Remove toothpicks or twine. Garnish with chopped parsley or chives if desired.

Notes

Use thick-cut bacon for best results to avoid burning and ensure crispiness. Rotate corn frequently to cook evenly and prevent flare-ups. Baste with BBQ sauce only in the last 5 minutes to avoid burning the glaze. Let corn rest after grilling to allow juices to redistribute and glaze to set. If no grill is available, bake at 400°F (200°C) for 30 minutes, turning halfway, and broil briefly to crisp bacon.
