These crispy maple glazed delicata squash rings are a quick and easy side dish that feels like a treat. With a caramelized maple glaze and tender squash, they’re perfect for fall gatherings or weeknight dinners.

Ingredients

Scale
  • 1 medium Delicata squash (about 1 pound)
  • 2 tablespoons pure maple syrup
  • 1 tablespoon unsalted butter, melted
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper, freshly ground
  • Optional garnish: fresh thyme leaves or flaky sea salt

Instructions

  1. Preheat your oven to 425°F (220°C). Position the rack in the upper third of the oven.
  2. Wash the Delicata squash thoroughly. Cut off both ends, then slice crosswise into 1/2-inch thick rings. Scoop out seeds and stringy pulp from the center of each ring.
  3. In a small bowl, whisk together melted butter, maple syrup, kosher salt, and black pepper until well combined.
  4. Line a baking sheet with parchment paper or a silicone baking mat. Arrange squash rings in a single layer without overlapping.
  5. Brush the maple glaze generously over the top of each ring, then flip and brush the other side. Use all of the glaze.
  6. Roast for 10 minutes until squash starts to soften and glaze bubbles.
  7. Remove from oven, flip each ring with tongs, and brush any pooled glaze back over the rings.
  8. Switch oven to broil. Return baking sheet and broil for 2-3 minutes, watching carefully, until edges are dark and crispy and squash is tender.
  9. Let rest on the pan for 2 minutes.
  10. Transfer to a serving platter. Sprinkle with fresh thyme leaves and flaky sea salt if desired. Serve warm or at room temperature.

Notes

Don’t skip the broiler step for crispy edges. Cut uniform 1/2-inch thick slices. Don’t overcrowd the pan. Use pure maple syrup, not pancake syrup. For dairy-free, substitute butter with coconut oil or vegan butter. For a spicy version, add 1/4 teaspoon cayenne pepper to the glaze. For an herb-infused version, add 1 teaspoon fresh rosemary or sage. For a balsamic version, replace 1 tablespoon maple syrup with balsamic vinegar. For an air fryer version, cook at 400°F for 8-10 minutes, flipping halfway. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 400°F oven for 5-7 minutes or in an air fryer at 375°F for 3-4 minutes. Not recommended for freezing.
