  • 2 tablespoons olive oil

Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper. (About 5 minutes)
  2. Set up breading stations: place flour in one bowl, beaten eggs in a second bowl, and combine grated parmesan, panko breadcrumbs, salt, and pepper in a third bowl. (5 minutes)
  3. Dredge each chicken thigh first in flour, shaking off excess, then dip into beaten eggs, and press firmly into the parmesan-panko mixture to coat well. (10 minutes)
  4. Heat olive oil in a cast-iron or heavy-bottomed oven-safe skillet over medium heat until shimmering but not smoking. (3 minutes)
  5. Place chicken thighs skin side down in the skillet without overcrowding. Cook undisturbed for 6-7 minutes until crust is deep golden brown and releases easily. (7 minutes)
