Crispy Parmesan Zucchini Fritters with Garlic Herb Dipping Sauce

These crispy Parmesan zucchini fritters are golden and cheesy with a tender inside, paired perfectly with a fresh garlic herb dipping sauce. A quick and easy summer recipe that’s perfect as an appetizer or side dish.

  • 3 medium zucchinis, shredded (about 4 cups)
  • 1 cup finely grated Parmesan cheese
  • ⅓ cup all-purpose flour (40 grams)
  • 2 large eggs, beaten
  • 2 cloves garlic, minced
  • 2 tablespoons fresh herbs, chopped (parsley, chives, or basil)
  • Salt and black pepper, to taste
  • ¼ cup olive oil, for frying
  • ½ cup Greek yogurt or sour cream
  • 1 tablespoon lemon juice

Instructions

  1. Shred about 3 medium zucchinis using a box grater or food processor (around 4 cups shredded). Place the shredded zucchini in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.
  2. In a large bowl, combine the squeezed zucchini with 1 cup finely grated Parmesan, ⅓ cup all-purpose flour, 2 beaten large eggs, 2 tablespoons chopped fresh herbs, and salt and black pepper to taste. Stir until well mixed. If too wet, add a little more flour.
  3. In a small bowl, mix ½ cup Greek yogurt or sour cream with 2 minced garlic cloves, 1 tablespoon lemon juice, 1 tablespoon chopped fresh herbs, and a pinch of salt. Stir well and chill while cooking fritters.
  4. Heat 2 tablespoons olive oil in a large nonstick skillet or cast iron pan over medium heat until hot but not smoking.
  5. Scoop about 2 tablespoons of batter per fritter and gently flatten into patties. Place in the pan with space between each. Cook for 3-4 minutes per side until golden brown and crispy. Add more oil between batches if needed. Drain cooked fritters on paper towels.
  6. Serve warm with a generous drizzle or side of the garlic herb dipping sauce.

Notes

Squeeze out zucchini moisture thoroughly to avoid soggy fritters. Use medium heat to prevent burning. Let batter rest 5-10 minutes before cooking. Cook in batches without overcrowding the pan. Keep cooked fritters warm in a 200°F oven if needed. Wet hands slightly to shape batter if sticky.
