These crispy pizza roll-ups are a quick and easy snack featuring a golden, crackly crust filled with pepperoni and melted mozzarella, served with a tangy marinara dipping sauce. Perfect for any occasion, they offer a satisfying crunch and gooey cheese inside.

  • 1 package refrigerated pizza dough (about 13.8 oz / 390g)
  • 1 cup shredded mozzarella cheese (about 100g), preferably whole milk
  • 2025 slices pepperoni or favorite pizza meat
  • 1 tablespoon olive oil, for brushing the dough
  • 1 teaspoon Italian seasoning (optional)
  • Flour for dusting (about 1/4 cup / 30g)
  • 1 cup marinara sauce (about 240ml)
  • 1 teaspoon dried basil or a few fresh basil leaves, chopped
  • 1/2 teaspoon garlic powder or 1 small garlic clove, minced
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Lightly flour your work surface. Roll out the pizza dough into a rectangle about 12×8 inches (30×20 cm). If the dough resists, let it rest for 5 minutes.
  2. Brush the dough lightly with olive oil. Sprinkle Italian seasoning evenly over the surface.
  3. Layer pepperoni slices evenly over the dough, leaving about a 1/2 inch border on the edges.
  4. Spread shredded mozzarella cheese over the pepperoni.
  5. Starting from the longer side, roll the dough tightly into a log shape.
  6. Use a sharp knife or pizza cutter to slice the log into 1-inch pieces.
  7. Pour about 1/2 inch of vegetable or canola oil into a skillet and heat over medium heat until shimmering (about 350°F).
  8. Carefully place roll-ups cut side down in hot oil. Fry in batches for 2-3 minutes per side until golden brown and crispy.
  9. Remove roll-ups with a slotted spoon and drain on paper towels. Let cool for a minute.
  10. While roll-ups cook, combine marinara sauce with garlic, basil, salt, pepper, and red pepper flakes in a small bowl. Warm gently if desired.
  11. Serve roll-ups warm with marinara dipping sauce.

Notes

Brush dough with olive oil before frying for extra crispness. Maintain oil temperature around 350°F to avoid soggy or burnt roll-ups. Let dough come to room temperature before rolling. For a lighter version, bake at 425°F for 15-20 minutes, flipping halfway. Freeze unbaked roll-ups on a tray before storing for easy future cooking.
