Quick and satisfying tacos featuring crispy smash burger patties, a punchy homemade special sauce, and fresh toppings. Perfect for casual gatherings or a fast, flavorful meal.

  • 1 lb ground beef (80/20 preferred)
  • Salt and freshly ground black pepper, to taste
  • Vegetable oil or clarified butter, for the skillet
  • 8 small flour or corn tortillas
  • Shredded iceberg lettuce or cabbage
  • Diced tomatoes or pico de gallo
  • Thinly sliced red onions or pickled onions (optional)
  • Shredded cheddar or Monterey Jack cheese
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp hot sauce or sriracha
  • 1 tsp apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. In a small bowl, combine mayonnaise, ketchup, Dijon mustard, smoked paprika, hot sauce, and apple cider vinegar. Whisk until smooth, season with salt and pepper, cover and chill.
  2. Divide ground beef into 8 equal portions (about 2 oz each). Roll into loose balls without overworking.
  3. Heat skillet over medium-high heat and add a thin layer of vegetable oil or clarified butter until smoking hot.
  4. Place 4 beef balls spaced apart in skillet. Press down firmly with spatula to flatten into thin patties about ¼ inch thick. Hold pressure for 10-15 seconds.
  5. Cook patties untouched for 2-3 minutes until edges are crispy and browned.
  6. Flip patties carefully, immediately add shredded cheese on top, cook 1-2 minutes until cheese melts and burger is cooked through. Remove and keep warm. Repeat with remaining beef balls.
  7. Warm tortillas on a dry skillet or over open flame for 20-30 seconds per side until pliable and slightly charred.
  8. Spread a spoonful of special sauce on each tortilla. Add a cheesy smash burger patty, shredded lettuce or cabbage, diced tomatoes or pico de gallo, and thin onion slices. Drizzle more sauce if desired.
  9. Serve immediately while patties are juicy and tortillas warm.

Notes

Do not overcrowd the skillet to ensure even heat and crust formation. Press patties firmly but quickly to avoid squeezing out juices. Chill the special sauce for at least 30 minutes to meld flavors. Warm tortillas on dry skillet or open flame for best texture. For gluten-free, use corn tortillas. For vegetarian, substitute beef with plant-based patties and use dairy-free mayo.
