Ingredients

Scale
  • 2 pounds beef chuck roast, thinly sliced
  • 4 cups fresh broccoli florets
  • 2 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup beef broth
  • 1/3 cup brown sugar, packed
  • 1/4 cup oyster sauce
  • 2 tablespoons cornstarch mixed with 3 tablespoons cold water (slurry)
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions, sliced (for garnish)
  • Cooked white rice or noodles, for serving

Instructions

  1. Prep the beef (10 minutes): Slice beef chuck roast into thin strips, about 1/4-inch thick, cutting against the grain. Pat dry with paper towels and season lightly with salt and pepper.
  2. Sear the beef (optional but recommended, 5 minutes): Heat 1 tablespoon sesame oil in a large skillet over medium-high heat. Working in batches, sear beef strips for 1-2 minutes per side until browned. Transfer to slow cooker.
  3. Build the sauce (5 minutes): In a small bowl, whisk together soy sauce, beef broth, brown sugar, oyster sauce, minced garlic, and grated ginger. Pour over beef in slow cooker and stir gently.
  4. Slow cook (4-6 hours on low or 2-3 hours on high): Cover and cook on low for 4-6 hours or high for 2-3 hours until beef is tender.
  5. Add the broccoli (30 minutes before serving): Stir in broccoli florets. Cover and cook on high for 20-30 minutes until crisp-tender.
  6. Thicken the sauce (5 minutes): Mix cornstarch and cold water until smooth. Remove lid, switch slow cooker to high, and pour in slurry while stirring constantly. Cook 2-3 minutes until sauce thickens and becomes glossy.
  7. Finish and serve (5 minutes): Stir in remaining 1 tablespoon sesame oil. Taste and adjust seasoning. Garnish with sesame seeds and sliced green onions. Serve over rice or noodles.

Notes

Searing the beef adds depth of flavor but can be skipped if short on time. For gluten-free, use tamari and gluten-free oyster sauce. For a spicy kick, add 1-2 teaspoons sriracha or red pepper flakes. Leftovers keep in the refrigerator for up to 4 days and freeze well for up to 3 months.
