  • 1 tablespoon unsweetened cocoa powder, sifted
  • 1/2 teaspoon vanilla extract
  • Pinch of salt (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Grease two 6-ounce ramekins with butter and dust lightly with cocoa powder to prevent sticking. Set aside.
  2. Melt bittersweet and milk chocolate with butter in a heatproof bowl over simmering water, stirring gently until smooth and glossy. Remove from heat and let cool slightly.
  3. In a medium bowl, whisk eggs and granulated sugar until pale and slightly thickened, about 3–4 minutes by hand or 2 minutes with a hand mixer.
  4. Slowly pour melted chocolate mixture into eggs while whisking continuously. Add vanilla extract and a pinch of salt.
  5. Sift in flour and cocoa powder, folding gently with a spatula until just combined. Avoid overmixing.
  6. Divide batter evenly into prepared ramekins, filling about 3/4 full. Place on a baking sheet and bake for 12–14 minutes until edges are set but centers are soft and slightly jiggly.
  7. Let cakes cool in ramekins for 1–2 minutes. Run a knife around edges to loosen, invert onto plates, and serve immediately.

Notes

Do not overbake to maintain the molten center. Use room temperature eggs for better mixing. Grease and dust ramekins with cocoa powder to prevent sticking. If batter is too thick, stir gently but avoid adding extra flour or liquid. For gluten-free, substitute flour with a 1:1 gluten-free blend.
