  • 1 lb cherry tomatoes, halved
  • 8 oz mozzarella balls (bocconcini or ciliegine)
  • 1/4 cup olive oil (extra virgin)
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/2 cup fresh basil leaves, torn
  • Salt and freshly ground black pepper, to taste
  • 1 French baguette, sliced into 1/2-inch pieces, toasted

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine halved cherry tomatoes, minced garlic, olive oil, smoked paprika, crushed red pepper flakes (if using), and a pinch of salt and black pepper. Toss gently to coat evenly.
  3. Pour the tomato mixture into an oven-safe skillet or baking dish, spreading it out evenly. Nestle the mozzarella balls throughout the tomatoes without stirring.
  4. Roast for 15-18 minutes until tomatoes soften and mozzarella melts slightly but retains shape.
  5. While roasting, slice and toast the baguette slices until golden and crisp.
  6. Remove the pan from the oven and tear fresh basil leaves over the hot tomatoes and mozzarella.
  7. Season again to taste with salt, pepper, and a drizzle of olive oil if desired.
  8. Serve immediately by scooping the tomato and cheese mixture onto toasted baguette slices.

Notes

If mozzarella browns too fast, tent the pan loosely with foil halfway through roasting. For a smokier flavor, sprinkle smoked salt before serving. Fresh basil is preferred over dried herbs for brightness. Toast bread well to avoid sogginess. Can substitute dairy-free mozzarella and gluten-free bread for dietary needs.
