  • Cinnamon sugar coating:
  • 1/2 cup (100g) granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  3. In a separate bowl, whisk the apple cider, granulated sugar, melted butter, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined; do not overmix.
  5. Spoon the batter evenly into the muffin cups, filling each about 3/4 full.
  6. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Let the muffins cool in the tin for about 5 minutes.
  8. While muffins cool, mix granulated sugar and ground cinnamon in a shallow bowl and melt the butter for coating.
