This easy apple cider mimosa is the perfect fall cocktail, ready in just 5 minutes. With crisp apple cider, dry sparkling wine, and a cinnamon sugar rim, it’s a festive and crowd-pleasing drink for any gathering.

Ingredients

Scale
  • 1 cup (240 ml) apple cider, chilled
  • 1 bottle (750 ml) dry sparkling wine or Champagne (e.g., Prosecco or Cava), chilled
  • 2–3 tablespoons apple brandy or bourbon (optional)
  • Ice (optional)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1–2 tablespoons honey or agave syrup
  • Lemon or apple slice (for rim, optional)
  • Apple slices (for garnish)
  • Cinnamon sticks (for garnish)
  • Fresh rosemary sprigs (for garnish)

Instructions

  1. Prepare the cinnamon sugar mixture: In a small shallow dish, combine 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon. Mix with a fork until evenly combined.
  2. Prepare the rim ‘glue’: Pour 1-2 tablespoons honey or agave syrup into another small shallow dish. If too thick, warm slightly or add a few drops of warm water.
  3. Rim the glasses: Dip the rim of each champagne flute or coupe into the honey, coating the outer edge. Then dip into the cinnamon sugar mixture, rotating to coat evenly. Tap off excess sugar.
  4. Chill the glasses (optional): Place rimmed glasses in the refrigerator for 5-10 minutes to set the sugar.
  5. Prepare the apple cider base: In a pitcher or large measuring cup, combine 1 cup chilled apple cider with 2-3 tablespoons apple brandy or bourbon (if using). Stir gently.
  6. Fill the glasses: Remove glasses from fridge. Fill each about one-third full with the apple cider mixture.
  7. Top with sparkling wine: Slowly pour chilled sparkling wine into each glass, filling almost to the top. Use a gentle pour to preserve bubbles.
  8. Add a splash of cider (optional): For a stronger apple flavor, add a tiny splash of plain apple cider on top.
  9. Garnish and serve: Add a thin apple slice to each glass, a cinnamon stick, and a rosemary sprig if desired. Serve immediately.

Notes

The cinnamon sugar rim will start to dissolve if it sits too long in the liquid, which flavors the drink as you sip. For the prettiest presentation, don’t rim the glasses more than 30 minutes before serving. Use cold ingredients to keep bubbles longer. For a non-alcoholic version, swap sparkling wine for sparkling apple cider or non-alcoholic sparkling wine.
