These crispy, spicy buffalo cauliflower bites are a game day favorite that’s quick, easy, and packed with flavor. A happy accident turned into the most-requested appetizer, perfect for parties or a quick snack.

  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup water
  • 1/2 cup hot sauce (e.g., Frank’s RedHot Original)
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon honey or maple syrup (optional)
  • Ranch or blue cheese dressing for serving (optional)
  • Fresh celery and carrot sticks for serving (optional)
  • Chopped green onions or fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper.
  2. Cut the cauliflower into bite-sized florets (about 1 to 1.5 inches wide). Rinse and pat them very dry with a clean kitchen towel.
  3. In a large mixing bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Slowly pour in the water while whisking continuously until you get a smooth batter. It should be thick enough to coat the back of a spoon but still pourable. If too thick, add water a tablespoon at a time; if too thin, add a little more flour.
  4. Add the dried florets to the bowl with the batter. Gently toss with a spatula or your hands until every piece is evenly coated.
  5. Place the coated florets on the prepared baking sheet in a single layer, making sure they are not touching each other.
  6. Bake for 20 minutes, flipping each floret halfway through with tongs so they brown evenly. The edges should start turning golden brown and the batter should look set.
  7. While the cauliflower bakes, make the buffalo sauce. In a small saucepan over low heat, combine the hot sauce, melted butter, and honey (if using). Stir until smooth and warm. Alternatively, microwave together in a bowl for 30 seconds. Set aside.
  8. Once the cauliflower is out of the oven, transfer it to a large bowl. Pour the warm buffalo sauce over the top and gently toss until every piece is coated.
  9. Return the sauced cauliflower to the baking sheet (use the same parchment) and bake for another 5-10 minutes, watching closely so the sauce doesn’t burn. The edges should look dark and glossy.
  10. Serve immediately. Transfer to a serving platter, drizzle with any remaining sauce, and sprinkle with chopped green onions or parsley. Serve with ranch or blue cheese dressing and celery sticks on the side.

Notes

Dry the cauliflower thoroughly to avoid sogginess. Don’t skip flipping halfway through the first bake. For extra crispy results, place a wire rack on the baking sheet. Watch the second bake closely to prevent burning. Make the sauce while the cauliflower bakes to save time. Use unsalted butter to control saltiness.
