Easy Chewy 4-Ingredient Banana Oat Breakfast Cookies

Quick, healthy, and chewy breakfast cookies made with just four simple ingredients—bananas, oats, peanut butter, and optional sweetener—perfect for busy mornings and grab-and-go meals.

  • 2 medium ripe bananas (about 7 oz peeled / 200g)
  • 1 ½ cups old-fashioned rolled oats (about 4.75 oz / 135g)
  • ½ cup natural peanut butter (about 4.4 oz / 125g)
  • 2 tablespoons maple syrup or honey (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the bananas in a large mixing bowl until smooth with a few small lumps remaining.
  3. Stir in the natural peanut butter until the mixture is thick and sticky.
  4. Add the rolled oats and mix until fully combined.
  5. If using, stir in the maple syrup or honey for extra sweetness.
  6. Scoop heaping tablespoon-sized mounds of dough onto the baking sheet, spacing about 2 inches apart, and flatten slightly.
  7. Bake for 12–15 minutes until edges are golden brown but centers remain soft.
  8. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use ripe bananas with brown spots for best sweetness and moisture. Natural peanut butter without added sugar or oils keeps cookies chewy. Do not overmix to avoid drying out the cookies. Flatten cookies before baking as they don’t spread much. Add more oats if dough is too wet. Cookies freeze well and can be reheated in microwave or toaster oven.
