Ingredients

Scale
  • 1 ½ cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ½ cup (113g) unsalted butter, softened
  • 2 large eggs, room temperature
  • ½ cup (120ml) whole milk, room temperature
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ⅓ cup (60g) rainbow sprinkles (jimmies)
  • ½ cup (113g) unsalted butter, softened (for frosting)
  • 2 cups (240g) powdered sugar
  • 2 tablespoons whole milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • Extra rainbow sprinkles for decorating

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. Cream the butter and sugar: In a medium bowl, beat softened butter and granulated sugar on medium speed for 3-4 minutes until light and fluffy. Scrape down sides halfway through.
  3. Add eggs and vanilla: Beat in eggs one at a time, mixing well after each. Add vanilla extract and beat until combined.
  4. Mix dry ingredients: In a small bowl, whisk together flour, baking powder, and salt.
  5. Alternate adding dry ingredients and milk: With mixer on low, add one-third of flour mixture, then half of milk. Repeat with another third of flour, remaining milk, and last third of flour. Mix just until combined after each addition.
  6. Fold in sprinkles: Use a rubber spatula to gently fold rainbow sprinkles into batter until evenly distributed.
  7. Bake: Pour batter into prepared pan and spread evenly. Bake for 28-32 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. Cool in pan for 10 minutes, then turn out onto a cooling rack to cool completely.
  8. Make frosting: Beat softened butter on medium speed until smooth and creamy, about 2 minutes. Gradually add powdered sugar, one cup at a time, beating on low. Add milk, vanilla, and salt, then beat on medium-high for 2-3 minutes until light and fluffy.
  9. Frost the cake: Once cake is completely cool, place on serving plate. Use an offset spatula to spread frosting evenly over top and sides. Press extra sprinkles into sides or pile on top.

Notes

Use room temperature ingredients for best results. Do not overmix the batter. Use jimmies (not nonpareils) to prevent color bleeding. Let cake cool completely before frosting. Store at room temperature for up to 3 days or freeze unfrosted for up to 3 months.
