Ingredients

Scale
  • 1 pound Italian sausage, casings removed
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (or to taste)
  • Salt and black pepper to taste
  • 8 ounces lasagna noodles, broken into 2-inch pieces
  • 1 cup whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Brown the Sausage: Heat a large skillet over medium-high heat. Add the Italian sausage, breaking it up with a wooden spoon as it cooks. Cook for about 5-7 minutes, until no longer pink and browned on edges. Leave about a tablespoon of fat in the pan for flavor. Transfer cooked sausage to the crockpot.
  2. Sauté the Aromatics: In the same skillet, add the diced onion. Cook for 3-4 minutes until softened and translucent. Add the minced garlic and cook for another 30 seconds until fragrant. Scrape the onions and garlic into the crockpot with the sausage.
  3. Deglaze the Pan: Pour about 1/2 cup of the chicken broth into the hot skillet. Use a wooden spoon to scrape up the browned bits from the bottom. Pour this liquid into the crockpot.
  4. Add the Broth and Tomatoes: Pour the remaining chicken broth into the crockpot. Add the crushed tomatoes and tomato paste. Stir until the tomato paste is fully incorporated.
  5. Season the Soup: Add the dried oregano, dried basil, red pepper flakes, and a pinch of salt and black pepper. Stir well.
  6. Cook Low and Slow: Cover the crockpot and cook on LOW for 4-5 hours or on HIGH for 2-3 hours.
  7. Add the Noodles: About 30 minutes before serving, stir in the broken lasagna noodles. Make sure they are fully submerged. Cover and cook on HIGH for 20-30 minutes until tender but still al dente.
  8. Prepare the Cheese Mixture: While the noodles cook, combine the ricotta cheese, shredded mozzarella, and grated Parmesan in a small bowl. Stir until well mixed.
  9. Serve and Finish: Ladle the hot soup into bowls. Add a generous dollop of the cheese mixture on top. Sprinkle with fresh parsley and extra Parmesan if desired. Serve with crusty bread.

Notes

For meal-prepping, keep the noodles separate until serving to prevent them from becoming mushy. The soup thickens as it sits; add extra broth when reheating. The flavors improve after a day in the fridge.
