  • Garlic powder (1/2 teaspoon)

Instructions

  1. Soften the cream cheese by leaving it out for about 30 minutes or microwaving in 10-second bursts until soft but not melted (about 20-30 seconds).
  2. In a medium bowl, combine softened cream cheese, sour cream, and mayonnaise. Mix until creamy and smooth, about 1-2 minutes.
  3. Stir in shredded cheddar, green onions, grated carrot, garlic powder, salt, and black pepper until evenly distributed.
  4. Place each large tortilla flat on a work surface. If tortillas feel dry, wrap in a damp paper towel and microwave for 10 seconds to soften.
  5. Spread a thin, even layer of the creamy mixture over each tortilla, leaving about 1/2 inch border around the edges.
  6. Place fresh baby spinach leaves evenly on top of the filling layer.
  7. Starting at one edge, carefully roll each tortilla tightly but gently to avoid squeezing out the filling.
  8. Wrap each roll in plastic wrap and refrigerate for at least 30 minutes to help the filling set and make slicing neater.
  9. Use a sharp knife to cut each roll into 1-inch thick slices, resembling little diplomas.
  10. Arrange the slices on a serving platter and garnish with chopped parsley or dill and cherry tomato halves if desired.
