Ingredients

Scale
  • 3 pounds boneless, skinless chicken thighs (or breasts)
  • 1.5 cups buffalo wing sauce (e.g., Frank’s RedHot)
  • 4 tablespoons unsalted butter, cubed
  • 1 packet (1 ounce) dry ranch dressing mix
  • 20 small slider buns (e.g., Hawaiian rolls) or 12 larger buns
  • Blue cheese or ranch dressing, for drizzling
  • Celery and carrot sticks, for serving
  • Optional toppings: thinly sliced red onion, pickled jalapeños, shredded lettuce, crumbled blue cheese

Instructions

  1. Prep the Chicken: Pat the chicken thighs dry with paper towels. Trim off any excess fat or skin. Season lightly with salt and pepper on both sides.
  2. Make the Sauce: In a small bowl, whisk together the buffalo wing sauce and cubed butter until the butter starts to melt. Stir in the dry ranch dressing mix until dissolved.
  3. Layer in the Slow Cooker: Place the seasoned chicken thighs in the bottom of the slow cooker in a single layer if possible. Pour the sauce mixture evenly over the top.
  4. Cook Low and Slow: Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until the chicken is tender enough to shred easily with a fork. Internal temperature should reach 165°F.
  5. Shred the Chicken: Carefully remove the chicken to a cutting board or use two forks right in the slow cooker. Shred the meat into bite-sized pieces. Discard any large pieces of fat or gristle. Return the shredded chicken to the slow cooker and stir it into the sauce.
  6. Let It Soak: Let the shredded chicken sit in the warm sauce for 15-20 minutes before serving. Keep the slow cooker on the ‘Warm’ setting during this time.
  7. Toast the Buns: Preheat oven to 350°F. Split the slider buns in half and place them cut-side up on a baking sheet. Toast for 3-5 minutes until lightly golden.
  8. Assemble the Sliders: Place the bottom halves of the toasted buns on a serving platter. Using a slotted spoon, pile on the buffalo chicken mixture, letting excess sauce drip off. Top with a drizzle of ranch or blue cheese dressing and any optional toppings. Place the top buns on and press down gently.
  9. Serve Immediately: Serve warm with celery and carrot sticks on the side.

Notes

Toast the buns to prevent sogginess. Use a slotted spoon to drain excess sauce. For best texture, cook on LOW. Chicken thighs stay juicier than breasts. The chicken tastes even better the next day. Can be made ahead and reheated.
