Ingredients

Scale
  • 1 pound ground beef (or ground turkey or chicken)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes with green chilies (undrained)
  • 1 can (15 ounces) fire-roasted diced tomatoes (undrained)
  • 1 can (15 ounces) whole kernel corn, drained
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 packet (1 ounce) taco seasoning mix
  • 2 cups beef broth (low-sodium recommended)
  • Optional toppings: shredded cheddar cheese, sour cream, sliced jalapeños, chopped cilantro, crushed tortilla chips, diced avocado, lime wedges

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat for 5-7 minutes, breaking it apart with a wooden spoon, until no longer pink. Drain excess grease if needed.
  2. Add diced onion to the skillet and cook for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  3. Transfer the meat and onion mixture to a 6-quart slow cooker.
  4. Add drained and rinsed black beans, drained and rinsed pinto beans, undrained diced tomatoes with green chilies, undrained fire-roasted diced tomatoes, and drained corn to the slow cooker.
  5. Sprinkle ranch seasoning mix and taco seasoning mix over the ingredients. Pour in beef broth. Stir well to combine.
  6. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  7. Taste and adjust seasoning if needed. Add a squeeze of lime juice or a pinch of cumin if the flavor is flat.
  8. Serve hot with desired toppings.

Notes

For a vegetarian version, skip the ground meat and add an extra can of beans (chickpeas or kidney beans) and use vegetable broth. For a creamy version, stir in 4 ounces of cream cheese during the last 30 minutes of cooking. The soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months. Flavors improve after a day or two.
