Easy Crockpot White Chicken Chili (Freezer Friendly)

This easy crockpot white chicken chili is a comforting, no-fuss meal that simmers all day without needing attention. It’s freezer-friendly, made with simple ingredients, and delivers a creamy, satisfying texture without any dairy.

  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 1 lb (450g) dried great northern beans
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cans (4 oz / 113g each) diced green chiles
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 4 cups (960ml) low-sodium chicken broth
  • Salt and black pepper to taste
  • Fresh cilantro for garnish
  • Optional toppings: sour cream, shredded Monterey Jack cheese, sliced avocado, lime wedges, tortilla chips

Instructions

  1. Rinse the dried beans in a colander, picking out any stones or shriveled beans.
  2. Layer the diced onion and minced garlic at the bottom of a 6-quart slow cooker. Place the chicken breasts on top, then sprinkle the rinsed beans over and around the chicken.
  3. Sprinkle the cumin, oregano, chili powder, salt, and pepper over everything. Pour the canned green chiles on top. Do not stir.
  4. Carefully pour the chicken broth around the edges so the spices stay on the chicken. The liquid should just about cover the ingredients; add more broth or water if needed.
  5. Cook on low for 8-10 hours or on high for 4-5 hours, until the chicken shreds easily and the beans are tender.
  6. About 30 minutes before serving, remove the chicken to a cutting board and shred with two forks. Return the shredded chicken to the pot and stir.
  7. Ladle about 1 cup of the cooked beans and a little broth into a blender (or use an immersion blender directly in the pot). Blend until smooth, then stir back into the chili to thicken.
  8. Taste and adjust seasoning with more salt, pepper, or cumin. Let simmer for another 10-15 minutes on low.
  9. Serve hot, garnished with fresh cilantro and desired toppings.

Notes

For the freezer meal version, combine raw chicken, onion, garlic, dried beans, green chiles, and spices in a gallon-sized freezer bag. Seal, remove air, and freeze flat. Thaw overnight in the fridge, then dump into the slow cooker with broth and cook as directed. If using canned beans instead of dried, use 3 cans (15 oz each), drained and rinsed, reduce broth to 3 cups, and cook on low for 4-5 hours or high for 2-3 hours.
