  • 1 (15 oz / 425 g) can black beans, drained and rinsed
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 cup (150 g) fresh blueberries
  • 1 cup (120 g) shredded sharp cheddar cheese
  • 1 cup (120 g) shredded mozzarella cheese
  • 1 small red bell pepper, diced
  • 1 small white onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste
  • Fresh cilantro or parsley, chopped (for garnish)
  • A squeeze of fresh lime juice (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Dice the red bell pepper and white onion, halve the cherry tomatoes, rinse and drain the black beans, and mince the garlic.
  3. Place your skillet over medium heat and add the olive oil. Once shimmering, add the onion and bell pepper. Sauté for about 5 minutes until softened and fragrant, stirring occasionally.
  4. Toss in the minced garlic, smoked paprika, and cumin. Stir for another minute until aromatic, careful not to burn the garlic.
  5. Add the black beans to the skillet and stir well to coat with the seasoned veggies. Cook for 2-3 minutes to heat through.
  6. Evenly distribute the halved cherry tomatoes and fresh blueberries over the bean mixture without stirring.
  7. Combine the shredded cheddar and mozzarella cheeses, then sprinkle generously over the entire pan.
  8. Transfer the skillet to the oven and bake for 15-20 minutes, or until the cheese is bubbly and slightly browned on the edges.
  9. Remove from the oven and let cool for 5 minutes. Sprinkle chopped cilantro or parsley and a generous squeeze of fresh lime juice over the top.
  10. Serve warm with tortilla chips or toasted baguette slices for scooping.

Notes

Use fresh blueberries for best texture; frozen can get mushy. Keep a close eye on the cheese during the last 5 minutes of baking to avoid burning. Adding a splash of lime juice at the end brightens the flavors. Cast iron skillet preferred for even heat and crispy edges. Can prepare ahead and refrigerate up to 6 hours before baking, adding extra baking time if baking cold.
