  • ½ cup granulated sugar (100g)
  • ¼ cup brown sugar (50g), packed
  • 2 large eggs, room temperature
  • ¼ cup vegetable oil (60ml)
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips (85g) (optional)
  • ¼ cup chopped pecans or walnuts (30g) (optional)
  • 2 tablespoons pepitas (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, and salt. Set aside.
  3. In a large bowl, whisk together pumpkin puree, Greek yogurt, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth and well combined.
  4. Add dry mixture to wet mixture. Fold gently with a rubber spatula until just combined—a few lumps are fine. Do not overmix.
  5. If using, fold in chocolate chips, nuts, or other mix-ins. Reserve a few to sprinkle on top.
  6. Divide batter evenly among muffin cups, filling each about ⅔ to ¾ full.
  7. Bake for 16-20 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. Tops should be golden and spring back when lightly pressed.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Don’t overmix the batter—stir until flour just disappears. Room temperature eggs and yogurt help create a smooth batter. For taller muffin tops, let batter rest 10 minutes before baking. Muffins keep at room temperature for up to 3 days or in the fridge for up to 5 days. Freeze for up to 3 months.
