Easy Homemade Pumpkin Spice Syrup Recipe for Perfect Fall Coffee

A quick and easy homemade pumpkin spice syrup that adds cozy, seasonal flavor to your coffee using simple pantry ingredients and whole spices.

  • 1 cup (200 g) granulated sugar
  • 1/2 cup (100 g) brown sugar
  • 2 cinnamon sticks (about 34 inches each)
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 2 tablespoons pure pumpkin puree (canned or fresh)
  • Pinch of salt (optional)

Instructions

  1. Combine water and sugars: In a medium saucepan, pour 1 cup (240 ml) of water, then add 1 cup (200 g) granulated sugar and 1/2 cup (100 g) brown sugar. Stir gently over medium heat until the sugars dissolve completely, about 3 to 5 minutes.
  2. Add spices and pumpkin puree: Toss in the 2 cinnamon sticks, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, and 1/2 teaspoon ground ginger. Stir in 2 tablespoons of pure pumpkin puree until well combined but not clumpy.
  3. Simmer gently: Bring the mixture to a low simmer with small bubbles, not a rolling boil. Reduce heat to low and let simmer for 10-12 minutes, stirring occasionally until syrup thickens slightly.
  4. Remove from heat and add vanilla: Take the pan off the heat and stir in 1 teaspoon vanilla extract and a pinch of salt if using.
  5. Strain the syrup: Pour the syrup through a fine mesh strainer or cheesecloth into a clean container to remove cinnamon sticks and solids. Press gently on pumpkin bits to extract flavor.
  6. Cool and store: Let syrup cool to room temperature, then seal and store in the refrigerator for up to two weeks.

Notes

Use whole cinnamon sticks for better flavor and avoid bitterness. Stir gently to avoid incorporating air. Adjust sweetness after cooling. If syrup is too thick after cooling, add a splash of water; if too thin, simmer longer. Store in airtight container in refrigerator up to two weeks. Shake or stir before use as spices may settle.
