  • 2 boneless, skinless chicken breasts (68 ounces each)
  • 1/4 cup (60 ml) honey
  • 3 tablespoons (45 ml) Dijon mustard
  • 1 tablespoon (15 ml) olive oil
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a medium bowl, whisk together honey, Dijon mustard, olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper.
  3. Pat the chicken breasts dry with paper towels and season all sides lightly with salt and pepper.
  4. Using a brush or spoon, spread about half of the honey mustard glaze evenly over each chicken breast. Place them in a baking dish or on a sheet pan, spaced slightly apart.
  5. Bake the chicken for 20 minutes. Halfway through baking (about 10 minutes), baste the chicken with the remaining glaze.
  6. Check doneness with an instant-read thermometer; the internal temperature should reach 165°F (74°C). If you don’t have a thermometer, cut into the thickest part to ensure juices run clear and meat is no longer pink.
  7. Let the chicken rest for 5 minutes before slicing to lock in the juices.

Notes

Pat chicken dry before glazing to help the glaze stick and avoid steaming. Rest chicken after baking to keep it juicy. Tent with foil if glaze starts to burn. Broil for 1-2 minutes at the end for a caramelized finish. Can substitute Dijon mustard with whole grain mustard for texture. Glaze also works well on grilled chicken or salmon.
