Easy Lemon Butter Salmon with Asparagus One-Pan Dinner Recipe

  • 4 salmon fillets (about 6 ounces/170 grams each), skin-on or skinless
  • 1 bunch asparagus (about 1 pound/450 grams), trimmed and washed
  • 4 tablespoons (60 grams) unsalted butter
  • Juice of 1 large lemon
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F (205°C).
  2. Rinse and trim the tough ends off the asparagus (about 1-2 inches). Toss asparagus in a mixing bowl with 1 tablespoon olive oil, a pinch of salt, and pepper. Set aside.
  3. In a small saucepan or microwave-safe bowl, melt 4 tablespoons (60 grams) of unsalted butter. Stir in minced garlic and cook for about 1 minute until fragrant, without browning. Remove from heat and mix in fresh lemon juice and a pinch of red pepper flakes if using.
  4. Pat dry the salmon fillets with paper towels. Season both sides lightly with salt and pepper.
  5. Place salmon fillets skin-side down on one side of a baking sheet. Spread asparagus in a single layer on the other side.
  6. Drizzle the lemon butter sauce evenly over the salmon and asparagus, using a brush or spoon to coat the salmon well.
  7. Roast in the preheated oven for 12-15 minutes, depending on salmon thickness, until salmon flakes easily with a fork and asparagus is tender but crisp.
  8. Remove from oven, sprinkle chopped fresh parsley over everything, and let rest for 2 minutes before serving.

Notes

If asparagus stalks are thick, roast them for 3 minutes before adding salmon to prevent undercooking. Pat salmon dry for better browning. Use fresh lemon juice for best flavor. Avoid overcrowding the pan for even roasting. For a dairy-free version, substitute butter with olive oil or plant-based spread.
