  • 2 medium fresh lemons (zest and juice)
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 4 cloves garlic, minced
  • 1/4 cup (60 ml) olive oil
  • 1 pound baby potatoes, halved
  • 8 ounces green beans, trimmed
  • 2 medium carrots, sliced diagonally
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 teaspoon smoked paprika

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine lemon zest and juice, olive oil, minced garlic, chopped rosemary and thyme, smoked paprika, kosher salt, and black pepper. Whisk until well blended.
  3. Pat chicken thighs dry with paper towels. Toss chicken in the marinade, coating each piece well. Let sit for 10 minutes if time allows.
  4. Halve baby potatoes, trim green beans, and slice carrots diagonally. Add vegetables to the bowl with any leftover marinade and toss to coat evenly.
  5. Spread potatoes, carrots, and green beans in a single layer on a large rimmed baking sheet. Nestle chicken thighs skin-side up among the vegetables, leaving space for air circulation.
  6. Roast in the oven for 30-35 minutes. At 15 minutes, use tongs to flip the vegetables for even browning, keeping chicken skin side up. Tent chicken with foil if skin browns too quickly.
  7. Check that chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender with golden edges. Add 5 more minutes if needed.
  8. Remove from oven and let rest for 5 minutes before serving.

Pat chicken skin dry before marinating to ensure crispiness. Do not overcrowd the pan to allow even roasting. Flip vegetables halfway through cooking to prevent sogginess. Tent chicken with foil if skin browns too fast. Use fresh herbs for best aroma and flavor. Marinate chicken for 10 minutes or longer for deeper flavor.
