Ingredients

Scale
  • 12 large eggs
  • 1 tablespoon white vinegar
  • 1 teaspoon salt
  • 1/3 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon paprika (plus extra for garnish)
  • 1 can (6 ounces) large pitted black olives
  • 1 jar sliced pickled jalapeños
  • Additional paprika for dusting
  • Optional: red food coloring

Instructions

  1. Boil the eggs: Place eggs in a large pot in a single layer. Cover with cold water by about an inch. Add 1 tablespoon vinegar and 1 teaspoon salt. Bring to a rolling boil, then cover, turn off heat, and let sit for 12 minutes. Prepare an ice bath.
  2. Cool and peel: Transfer eggs to ice bath for at least 5 minutes. Tap each egg to crack shell, roll between palms, and peel starting from the wider end. Peel under cold water for easier removal.
  3. Slice and remove yolks: Slice each egg in half lengthwise. Remove yolks to a mixing bowl. Arrange egg white halves on a serving platter.
  4. Make the filling: Add mayonnaise, yellow mustard, white vinegar, salt, pepper, garlic powder, and paprika to the yolks. Mash with a fork until smooth. Adjust seasoning to taste.
  5. Prepare decorations: Drain olives and pat dry. Slice olives crosswise into 1/4-inch rounds. Select jalapeño slices with red coloring for bloodshot effect. If using red food coloring, mix one drop with a teaspoon of water.
  6. Fill the eggs: Spoon filling into a piping bag or zip-top bag. Snip off 1/2 inch from corner. Pipe filling into each egg white half, creating a mound slightly above the edge.
  7. Assemble the eyeballs: Press one olive slice into the center of each filled egg. Arrange 2-3 jalapeño slices around the olive. Dust entire platter lightly with paprika.
  8. Chill before serving: Refrigerate for at least 30 minutes before serving. Can be prepared up to 24 hours in advance; add paprika dusting just before serving.

Notes

Use eggs at least a week old for easier peeling. For farm-fresh eggs, steam instead of boiling. The filling can be made up to 2 days ahead and stored in a piping bag. Add paprika garnish just before serving to prevent sogginess.
