Ingredients

Scale
  • 1 cup (240 ml) warm water (about 110°F/43°C)
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 tablespoon granulated sugar
  • 2 ½ cups (315 g) all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • ¼ cup (60 g) baking soda
  • 1 large egg, beaten with 1 tablespoon water
  • Coarse sea salt or pretzel salt, for sprinkling
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • ¾ cup (180 ml) whole milk
  • ½ cup (120 ml) your favorite beer (lager or pilsner recommended)
  • 1 ½ cups (170 g) sharp cheddar cheese, freshly shredded
  • ¼ teaspoon garlic powder
  • ¼ teaspoon mustard powder
  • Salt and black pepper, to taste

Instructions

  1. In a large mixing bowl, combine warm water, sugar, and yeast. Stir and let sit for about 5 minutes until foamy.
  2. Add flour, salt, and melted butter to the yeast mixture. Stir until a shaggy dough forms. Turn out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
  3. Place dough back in the bowl, cover with a clean kitchen towel, and let rest for 10 minutes.
  4. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Fill a large pot with about 6 cups of water and bring to a boil.
  5. Turn rested dough onto a lightly floured surface. Pat into a rough rectangle about ½-inch thick. Cut into small, bite-sized squares (about 1 inch each).
  6. Once water is boiling, carefully add ¼ cup baking soda. Drop 8-10 dough squares into the boiling water. Boil for 30 seconds, flip, and boil another 30 seconds. Transfer to prepared baking sheet using a slotted spoon. Repeat with remaining dough.
  7. In a small bowl, beat egg with 1 tablespoon water. Brush tops of each boiled pretzel bite with egg wash. Sprinkle generously with coarse sea salt.
  8. Bake for 12-15 minutes until deep golden brown and puffed.
  9. While bites bake, make the dip: In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly pour in milk and beer, whisking continuously. Cook for 2-3 minutes until thickened. Reduce heat to low, add shredded cheddar, garlic powder, and mustard powder. Stir until cheese is melted and smooth. Season with salt and pepper.
  10. Serve pretzel bites warm with beer cheese dip.

Notes

Don’t skip the baking soda bath—it’s essential for the chewy crust and deep brown color. Shred your own cheese for a smooth dip. Serve immediately for best texture. Leftover bites can be stored in an airtight container at room temperature for up to 2 days; reheat in a 350°F oven for 5 minutes.
