  • ½ cup cottage cheese, small-curd
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh blueberries (or frozen, thawed and drained)
  • 1 cup fresh strawberries, sliced
  • ½ cup raspberries (optional)
  • 2 tablespoons lemon juice
  • ¼ cup honey or maple syrup
  • 2 tablespoons cornstarch
  • ½ cup powdered sugar
  • 2 tablespoons fresh lemon juice (for glaze)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a large rimmed baking sheet (about 13×18 inches) with parchment paper.
  2. In a medium bowl, cream together the softened unsalted butter and granulated sugar using an electric mixer until light and fluffy, about 2-3 minutes.
  3. Add the cottage cheese, egg, and vanilla extract, mixing just until combined.
  4. Gradually add the all-purpose flour, mixing on low speed or folding in with a spatula until a soft dough forms. Avoid overworking the dough.
  5. Press the dough evenly into the bottom of the prepared baking sheet, about ¼ inch thick. If sticky, chill for 10 minutes before pressing.
  6. In a large bowl, gently toss the blueberries, sliced strawberries, and raspberries with lemon juice, honey or maple syrup, and cornstarch.
  7. Spread the berry mixture evenly over the crust, leaving a small border around the edges.
  8. Bake for 25-30 minutes, or until the crust is golden brown and the berries are bubbly and fragrant. Watch closely near the end to avoid burning.
  9. While baking, mix the powdered sugar with fresh lemon juice until smooth and pourable to make the glaze.
  10. Remove the pan from the oven and let the treats cool on a wire rack for at least 15 minutes.
  11. Drizzle the lemon glaze over the top, letting it pool in the berry juices.
  12. Garnish with fresh mint leaves if desired, slice into squares or rectangles, and serve warm or at room temperature.

Notes

Chill the dough before pressing to prevent shrinkage and crumbly crust. Use fresh ripe berries for best texture and flavor. Thaw and drain frozen berries to avoid soggy crust. Drizzle glaze while treats are warm for better absorption. If crust is underbaked, toast under broiler for 5 minutes watching carefully.
