  • 1 can (14 oz) sweetened condensed milk
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 box (15.25 oz) yellow cake mix
  • 1 cup (2 sticks) unsalted butter, melted
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large bowl, combine the pumpkin puree, sweetened condensed milk, pumpkin pie spice, vanilla extract, and salt. Whisk until smooth and uniform.
  3. Spread the pumpkin mixture evenly into the prepared baking dish.
  4. Sprinkle the dry cake mix evenly over the pumpkin layer, covering the entire surface.
  5. Drizzle the melted butter evenly over the cake mix. If using nuts, sprinkle them on top.
  6. Bake for 45-50 minutes, until the top is deep golden brown and the edges are bubbling. If the top browns too quickly, tent with foil after 35 minutes.
  7. Cool for at least 20 minutes before serving. Serve warm or at room temperature.

Notes

Do not stir the layers together. Let the cake cool for at least 20 minutes before cutting to allow the pumpkin layer to set. For a chunkier topping, grate cold butter over the cake mix instead of melting it. This cake can be made ahead and tastes even better the next day.
