Ingredients

Scale
  • 2 medium apples (about 300g total), peeled, cored, and sliced into ¼-inch pieces (recommend Honeycrisp or Granny Smith)
  • 2 tablespoons brown sugar (25g)
  • ½ teaspoon ground cinnamon (2g)
  • ¼ teaspoon ground nutmeg (1g)
  • 1 tablespoon all-purpose flour (8g)
  • 1 teaspoon lemon juice (5ml)
  • Pinch of flaky sea salt
  • ½ cup old-fashioned rolled oats (45g)
  • ¼ cup all-purpose flour (30g)
  • ¼ cup brown sugar (50g), packed
  • ¼ teaspoon ground cinnamon (1g)
  • 3 tablespoons unsalted butter (42g), melted
  • ¼ cup salted caramel sauce (60ml), plus extra for drizzling
  • Extra flaky sea salt for finishing

Instructions

  1. Preheat your oven to 375°F (190°C). Place two 10-ounce ramekins or a small baking dish (about 5×7 inches) on a rimmed baking sheet.
  2. Peel, core, and slice the apples into ¼-inch thick pieces. Toss with lemon juice to prevent browning.
  3. In a medium bowl, combine sliced apples, 2 tablespoons brown sugar, ½ teaspoon cinnamon, ¼ teaspoon nutmeg, 1 tablespoon flour, and a pinch of flaky salt. Toss until evenly coated.
  4. Divide the apple mixture between the ramekins, pressing down gently to create an even layer.
  5. Drizzle about 1 tablespoon of salted caramel sauce over each ramekin’s apple filling. Set remaining caramel aside.
  6. In a small bowl, combine rolled oats, ¼ cup flour, ¼ cup brown sugar, and ¼ teaspoon cinnamon. Stir with a fork. Pour melted butter over the dry ingredients and mix until evenly moistened (mixture should look like wet sand with clumps).
  7. Sprinkle the oat mixture evenly over the apples in each ramekin. Do not press down.
  8. Bake for 22-25 minutes, until topping is golden brown and filling is bubbly around the edges.
  9. Remove from oven and let cool for 5 minutes on a wire rack. Drizzle remaining salted caramel sauce over each crisp and sprinkle with a pinch of flaky sea salt.
  10. Serve warm, optionally topped with vanilla ice cream or whipped cream.

Notes

For best results, use old-fashioned rolled oats (not quick oats) to ensure a crunchy topping. If topping browns too quickly, tent with foil for the last 5-7 minutes. Let crisp rest 5 minutes before serving to allow juices to thicken. To make ahead, assemble unbaked crisp and refrigerate up to 24 hours; add 5 minutes to baking time.
