  • 4 cups cubed day-old bread (about 67 slices, thick-cut white or sourdough)
  • 1 tablespoon Dijon mustard
  • Salt to taste (about 1 teaspoon)
  • Freshly ground black pepper to taste (about ½ teaspoon)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the sausage in a skillet over medium heat until no longer pink, about 7-9 minutes. Drain excess fat and set aside to cool slightly.
  3. In a large mixing bowl, whisk together 8 eggs, 2 cups milk, 1 tablespoon Dijon mustard, salt, and black pepper.
  4. Cube the day-old bread into bite-sized pieces. If using fresh bread, toast lightly to help it hold up.
  5. Spray a 9×13-inch baking dish with cooking spray or rub lightly with butter.
  6. Spread half of the bread cubes evenly in the bottom of the dish. Sprinkle half of the cooked sausage and half of the shredded cheese over the bread.
  7. Repeat the layers with the remaining bread, sausage, and cheese.
  8. Pour the egg mixture evenly over the layered ingredients. Press down gently to help the bread soak in the liquid.
  9. Cover the dish tightly with plastic wrap or foil and refrigerate for at least 6 hours or overnight.
