A quick and easy sheet pan meal featuring juicy teriyaki-glazed chicken thighs, roasted vegetables, and fluffy jasmine rice, perfect for weeknight dinners or meal prep.

  • 1.5 lbs boneless, skinless chicken thighs
  • 1/3 cup low-sodium soy sauce
  • 3 tbsp honey or maple syrup
  • 1 tbsp fresh ginger, grated
  • 2 garlic cloves, minced
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch mixed with water
  • 2 cups broccoli florets
  • 1 medium red bell pepper, sliced
  • 2 medium carrots, thinly sliced
  • 2 stalks green onions, chopped
  • 1 cup cooked jasmine or short-grain white rice
  • Optional: toasted sesame seeds
  • Optional: pickled ginger

Instructions

  1. Preheat oven to 425°F (220°C). Line a rimmed sheet pan with parchment paper.
  2. In a medium bowl, whisk together soy sauce, honey or maple syrup, grated ginger, minced garlic, rice vinegar, and sesame oil.
  3. Mix cornstarch with 1 tablespoon cold water until smooth, then stir into the sauce mixture to thicken.
  4. Arrange chicken thighs evenly on one half of the sheet pan. Pour about two-thirds of the teriyaki sauce over the chicken, turning each piece to coat well. Reserve remaining sauce for basting.
  5. Toss broccoli florets, sliced red bell pepper, and carrots with a small drizzle of oil and a pinch of salt. Spread on the other half of the sheet pan in a single layer.
  6. Roast in the oven for 20 minutes. Halfway through, baste chicken with reserved sauce and toss veggies gently.
  7. Check chicken for an internal temperature of 165°F (74°C) and caramelized edges; vegetables should be tender-crisp. Roast an additional 3-5 minutes if needed.
  8. Cook jasmine rice according to package instructions and fluff with a fork.
  9. Assemble bento boxes by dividing rice, then topping with teriyaki chicken and roasted vegetables. Garnish with chopped green onions and toasted sesame seeds.
  10. Optionally, add pickled ginger on the side for a tangy contrast.

Notes

For best results, do not overcrowd the pan to allow even roasting and caramelization. Marinate chicken in sauce for 20-30 minutes if time allows to deepen flavor. If chicken isn’t caramelizing enough, broil for 1-2 minutes watching closely to avoid burning. Let chicken rest 5 minutes after roasting to retain juices. Use tamari for gluten-free option. Frozen broccoli can be used but fresh is preferred for texture.
