These easy slow cooker buffalo chicken sliders are the ultimate game day recipe. Made with tender chicken thighs, spicy buffalo sauce, and buttery buns, they are messy, spicy, and completely irresistible.

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup buffalo hot sauce (e.g., Frank’s RedHot Original)
  • 4 tablespoons unsalted butter, cubed
  • 1 tablespoon ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 12 slider buns (Hawaiian sweet rolls recommended)
  • 8 slices provolone cheese
  • 4 tablespoons salted butter, melted
  • 1 tablespoon everything bagel seasoning (optional)
  • 2 cups coleslaw mix
  • 3 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Pat the chicken thighs dry with paper towels. Trim off any excess fat. Season both sides lightly with salt, pepper, garlic powder, and onion powder.
  2. In the slow cooker, whisk together the buffalo hot sauce, cubed butter, and ranch seasoning.
  3. Place the seasoned chicken thighs into the slow cooker in a single layer if possible. Spoon some of the sauce over the top.
  4. Cover and cook on LOW for 4 to 5 hours, or on HIGH for 2.5 to 3 hours, until fork-tender.
  5. Carefully transfer the cooked chicken to a cutting board or large bowl. Use two forks to shred it into bite-sized pieces.
  6. Return the shredded chicken to the slow cooker with the sauce. Stir well to coat. Keep warm.
  7. In a medium bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper. Add the coleslaw mix and toss until coated. Set aside in the fridge.
  8. Preheat your broiler to high. Slice the entire pack of slider buns in half horizontally, keeping them connected. Place the bottom half on a baking sheet.
  9. Spoon the buffalo chicken evenly over the bottom buns. Layer the provolone slices on top. Place the top half of the buns on top.
  10. Brush the melted salted butter over the tops of the buns. Sprinkle with everything bagel seasoning if using.
  11. Place the baking sheet under the broiler for 2 to 4 minutes, watching closely, until the cheese is melted and the bun tops are golden brown.
  12. Carefully remove from the oven. Lift the top buns, spoon the cold slaw over the chicken, then replace the top buns. Slice into individual sliders and serve immediately.

Notes

Do not use chicken breasts; they dry out. Cook on LOW for best texture. Watch the broiler closely to avoid burning. Let sliders rest for a minute after broiling. Leftover chicken can be stored in the fridge for up to 4 days or frozen for up to 3 months.
