These soft, spiced pumpkin snickerdoodle cookies are made in a small batch of 8, perfect for a quick weeknight treat. With a cinnamon-sugar coating and tender centers, they deliver big flavor with minimal fuss.

Ingredients

Scale
  • 4 tablespoons unsalted butter, softened (1/2 stick)
  • 1/3 cup granulated sugar (65g)
  • 1/4 cup pumpkin puree (60g)
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 3/4 cup all-purpose flour (95g)
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar (for coating, 25g)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, beat softened butter and 1/3 cup granulated sugar together until light and fluffy, about 2 minutes with a hand mixer on medium speed.
  3. Mix in pumpkin puree, egg yolk, and vanilla extract until just combined.
  4. In a small bowl, whisk together flour, cream of tartar, baking soda, pumpkin pie spice, and salt.
  5. Gradually add dry mixture to wet mixture, stirring until just combined. Dough will be soft and slightly sticky.
  6. In a small shallow bowl, whisk together 2 tablespoons sugar and 1 teaspoon cinnamon for coating.
  7. Scoop 8 equal mounds of dough (about 1.5 tablespoons each) and roll into smooth balls.
  8. Roll each dough ball in cinnamon-sugar mixture until fully coated. Place on prepared baking sheet, spacing 2 inches apart.
  9. Bake for 10-12 minutes. Edges should be set and slightly golden, centers still soft and puffy.
  10. Let cookies rest on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Don’t overmix the dough. Use room temperature ingredients. Watch baking time closely; start checking at 9 minutes. For easier handling, chill dough for 15 minutes if too sticky. Cookies taste even better the next day.
