  • 1 large head fresh broccoli, cut into florets (about 4 cups)
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil (for finishing)
  • 1 teaspoon cornstarch mixed with 2 teaspoons water (slurry)
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions, sliced thin (for garnish)

Instructions

  1. Prep the broccoli: Wash the broccoli head thoroughly. Cut the florets into bite-sized pieces, about 1-2 inches across. Peel the stalks and slice them into thin rounds. Set aside in a bowl.
  2. Make the glaze: In a small bowl, whisk together 1/3 cup honey, 1/4 cup low-sodium soy sauce, 1 tablespoon rice vinegar, 6 minced garlic cloves, and 1/4 teaspoon red pepper flakes (if using). In a separate tiny bowl, mix 1 teaspoon cornstarch with 2 teaspoons cold water until smooth—this is your slurry.
  3. Season the salmon: Pat the salmon fillets dry with paper towels. Season both sides generously with salt and black pepper. Let them sit at room temperature for 5-10 minutes while you start the broccoli.
  4. Start the broccoli: Fill a medium pot with about 1 inch of water and bring to a boil. Place a steamer basket inside, add the broccoli florets and sliced stems, cover, and reduce heat to medium. Steam for 5-7 minutes until bright green and tender-crisp. When done, remove from heat and keep covered.
  5. Cook the salmon: While the broccoli steams, heat 2 tablespoons olive oil in a large non-stick skillet over medium-high heat. When the oil shimmers, carefully place the salmon fillets skin-side down (if using skin-on). Cook for 4 minutes without moving them. Using tongs, flip each fillet gently. Cook for another 3 minutes on the second side. The salmon should be golden brown and just cooked through.
  6. Make the glaze: Reduce the heat to medium-low. Pour the honey-garlic mixture into the pan around the salmon, not directly on top. Let it bubble gently for about 1 minute, then stir in the cornstarch slurry. The glaze will thicken quickly—about 30 seconds. Spoon it over the salmon fillets, turning them to coat evenly.
  7. Finish and serve: Remove the pan from heat. Drizzle with 1 teaspoon sesame oil and sprinkle with sesame seeds and sliced green onions. Plate the salmon alongside the steamed broccoli. Spoon any remaining glaze from the pan over everything.

Notes

For best results, don’t crowd the pan—cook salmon in batches if needed. Let the glaze bubble gently on medium-low heat to avoid burning the garlic. Take salmon out of the fridge 15-20 minutes before cooking for even searing. If the glaze gets too thick, add a splash of water to thin it out.
