Ingredients

Scale
  • 2 lbs (900g) ground beef (80/20 ground chuck)
  • 1 cup (120g) breadcrumbs (plain or Italian-style)
  • ½ cup (120ml) milk (whole milk preferred)
  • 2 large eggs
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • ⅓ cup (110g) honey
  • ¼ cup (60ml) soy sauce (low-sodium preferred)
  • 3 tbsp ketchup
  • 4 cloves garlic, minced (for glaze)
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 2 tbsp water

Instructions

  1. Prepare the slow cooker liner: Cut two long strips of parchment paper or foil, about 20 inches long. Lay them in a cross shape inside your slow cooker, with the ends hanging over the edges. Lightly spray the paper with non-stick spray.
  2. Make the glaze: In a small saucepan, combine honey, soy sauce, ketchup, minced garlic, and rice vinegar. Whisk together and bring to a simmer over medium heat. Let it bubble gently for 2-3 minutes until slightly thickened. In a small bowl, whisk cornstarch and water to make a slurry. Pour slurry into simmering glaze, whisk constantly, and cook for another minute until glossy and thick. Remove from heat and set aside. Reserve about ¼ cup of glaze for brushing at the end.
  3. Mix the meatloaf: In a large bowl, combine breadcrumbs and milk. Let sit for 5 minutes until breadcrumbs absorb the milk. Add eggs, diced onion, minced garlic, Worcestershire sauce, dried thyme, salt, and pepper. Mix gently. Add ground beef and mix until just combined. Do not overmix.
  4. Shape the meatloaf: Turn meat mixture onto the parchment sling in the slow cooker. Shape into a loaf about 8 inches long and 4 inches wide. Do not pack too tightly.
  5. Apply the first layer of glaze: Brush about half of the remaining glaze (not the reserved portion) all over the top and sides of the meatloaf.
  6. Cook: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until internal temperature reaches 160°F (71°C).
  7. Apply the final glaze: About 30 minutes before serving, carefully lift meatloaf out using the parchment sling. Place on a cutting board or platter. Brush reserved glaze all over. Optionally, broil for 2-3 minutes for extra stickiness.
  8. Rest and serve: Let meatloaf rest for 10 minutes before slicing. Slice thick and spoon any remaining glaze from the slow cooker over the top.

Notes

Don’t skip the panade (soaking breadcrumbs in milk) for a tender meatloaf. Use a meat thermometer to ensure doneness. Let the meatloaf rest before slicing. For extra stickiness, broil after applying final glaze.
