This easy stuffed acorn squash with sausage and apples is a quick and delicious weeknight dinner. Simply cut, stuff, and roast for a flavorful meal that feels special with minimal effort.

Ingredients

Scale
  • 2 medium acorn squash
  • 1 pound ground sausage (mild Italian or breakfast)
  • 1 medium apple (Honeycrisp or Fuji), diced into 1/4-inch cubes
  • 1/2 cup diced onion (yellow or sweet)
  • 2 cloves garlic, minced
  • 1 teaspoon dried sage
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • Optional: fresh thyme or parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Position rack in the middle.
  2. Cut each acorn squash in half from stem to tip. Scoop out seeds and stringy pulp. Place squash halves cut-side up in a baking dish.
  3. In a small bowl, mix olive oil and maple syrup. Brush mixture over cut sides and inside cavities of squash. Season with a pinch of salt and pepper.
  4. In a mixing bowl, combine ground sausage, diced apple, diced onion, minced garlic, dried sage, salt, and pepper. Mix with your hands until just combined.
  5. Divide sausage mixture evenly among the four squash halves. Press gently into cavities, mounding slightly.
  6. Roast for 35-45 minutes, until squash is tender when pierced with a fork and sausage is cooked through (internal temperature of 160°F / 71°C). If tops brown too quickly, tent with foil for last 10 minutes.
  7. Let rest in pan for 5 minutes before serving. Spoon pan juices over top. Garnish with fresh thyme or parsley if desired.

Notes

Don’t skip the maple syrup; it balances the savory sausage and brings out the squash’s sweetness. Check squash at 30 minutes; ovens vary. Use a meat thermometer to ensure sausage reaches 160°F. Let rest 5 minutes before serving. Double the batch for leftovers; reheat in 350°F oven for 15 minutes.
