These no-bake white chocolate avalanche cookies are a textural dream—crunchy rice cereal and mini marshmallows wrapped in a velvety white chocolate and peanut butter coating. Quick and easy to make, they’re perfect for cozy nights and crowd-pleasing occasions.

Ingredients

Scale
  • 3 cups crispy rice cereal (e.g., Kellogg’s Rice Krispies)
  • 1 ½ cups mini marshmallows
  • 1 cup white chocolate chips (e.g., Ghirardelli or Guittard)
  • ½ cup creamy peanut butter (no-stir variety)
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract (pure)
  • Pinch of sea salt (optional)
  • ¼ cup white chocolate chips (for optional drizzle)
  • ½ teaspoon coconut oil (for optional drizzle)
  • 2 tablespoons crushed freeze-dried raspberries or sprinkles (for optional topping)

Instructions

  1. Line a large baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, combine 3 cups crispy rice cereal and 1 ½ cups mini marshmallows. Stir to distribute evenly.
  3. In a medium microwave-safe bowl, combine 1 cup white chocolate chips, ½ cup creamy peanut butter, and 2 tablespoons coconut oil. Microwave in 30-second intervals, stirring after each, until smooth and glossy (about 1 ½ to 2 minutes total).
  4. Stir in 1 teaspoon vanilla extract and a pinch of sea salt (if using).
  5. Pour the warm white chocolate mixture over the cereal and marshmallows. Fold gently with a rubber spatula until everything is evenly coated.
  6. Working quickly, use a small cookie scoop or two spoons to drop mounds (about 1 ½ tablespoons each) onto the prepared baking sheet. Do not press down too hard.
  7. If desired, melt ¼ cup white chocolate chips with ½ teaspoon coconut oil and drizzle over the cookies. Top with crushed freeze-dried raspberries or sprinkles.
  8. Refrigerate for at least 30 minutes (or freeze for 15 minutes) until firm. Serve cold or at room temperature.

Notes

Work quickly once the chocolate mixture is added, as it sets fast. If the mixture hardens, microwave for 10 seconds to soften. For best texture, refrigerate until firm. Cookies taste even better the next day.
